Rum: 300 L still = 225 L of wash if we fill it 75% 225 X 0.1 = 22.5 L potential alcohol Actual yield might be 70% of 22.5L = 15.75 at 200 proof. Typical avg. % alcohol on the hearts first run is 65% or 130 proof So we should get about 24.2 L at 65% Cherry brandy:
I typically do only one run a day as it takes about 8 to 9 hours. That
way if I had a 1000 liter still it would be three times as fast. Actually my finished run is the second distillation at 75%. The first one is about 35% depending on the ETOH content of the original wine. It all depends on the starting alcohol but for the cherries I need to boil 240 gallons ( 4 runs of 60 gallon a time) that will get 60 gallons ready for the second boil. Now at the other end 240 gallons of cherry wine becomes 60 gallons of 30% distillate which becomes 10 gallons of 73% cherry brandy and the rest gets added back to the first boil. This is to say, 240 gallons of cherry wine becomes 150+ bottles of cherry brandy. |
