When we fill
the 1000L pot still up to the manway, we can get about 235 US gallons
of
low wines in the whiskey still. Filled with low wines at 25-27% ABV, we will
get between 6 to 8 x 20L barrels (120-160L) of undiluted new make
whiskey at about 68% ABV. We make our cuts around 72% (heads
cut) and 62% (tails cut).
We do 2
distillation and use both still for both types of distillations. Spirit
typically comes in when the column vapor temperature is about 78
degrees C. As the
alcohol level of the boiling mixture falls, the boiling temperature of
the mixture rises and the column temperature will rise to nearly 100 C
before the distillation of the tails is complete.
We
use a natural gas double Venturi burner with an induced draft fan on
the flue side and an equal sized combustion air supply pipe feeding the
Venturi. Operated
at our delivery PSI of 5 PSI, the burners have a max heat output of 1.2
millions BTU s per hour, but we never use more than 400.000 BTU s per
hour. Both blue pipe and air supply are routed through the roof to the
outside. All of this is contained in a brick structure which is lined
with ceramic fiber for addition insulation. We normally take
about 2 hours to heat up to distillation temperatures. Ward
Burner Systems is who we used for our burners. Complete distillation in
5 hours.
